Blueberry-chia breakfast porridge CIRS approved

Yum. CIRS approved, Paleo, Keto friendly, low glycemic, oat fee, grain free – this breakfast option will put a smile on your face 🙂 It’s fresh and ready in just a few minutes. Make it a complete & balanced meal that will keep you satisfied until lunch by adding a side dish like simple turkey sausage and your choice of low amylose vegetables.

Blueberry- chia breakfast porridge

Yield: One serving

Prep time: Under 5 minutes

Total time: Under 5 minutes

Ingredients:

⅓ cup organic frozen (or fresh) blueberries

1 cup canned Coconut milk (no additives)
1 tbsp Chia seeds
½ tsp Ceylon Cinnamon (not ‘cassia cinnamon’)

Optional add in items:

1 tbsp slightly toasted coconut flakes
1 tbsp Coconut flour
1 tsp flaxseed
1 tsp almond butter (no additives)
Pinch fresh orange zest (wash the fruit first, and use organic if possible)

Directions:

Gently stir all ingredients together in a soup sized bowl and let it set for a minute or two as the chia seeds thicken the mixture. Stir and enjoy the porridge warm or cold. Part of a complete breakfast- just add a side of protein & CIRS approved vegetables.

Best to enjoy the morning you make it- does not work well overnight or as a leftover.

Store your chia seeds in a cool, dark, dry place to keep invisible mycotoxins from forming. The refrigerator or freezer work well. If you do not like coconut, try almond milk- no definitive information could be found on the level of amylose in almond milk. Nuts do contain amylose, and poorly stored nuts can contain mycotoxins. But research specifically on nut milks could not be found at the time this recipe was written.

Nuts & seeds have been reported to contain harmful mycotoxins depending on how they were handled & stored prior to you purchasing them. In mycotoxin content studies focusing on nuts & seeds, Chia seed was unlikely to be contaminated.* Also worthy of note is cinnamon- as it is one of the rare dried spices that shows very low or no levels of mycotoxins. We strongly recommend ceylon cinnamon instead of cassia cinnamon common in supermarkets.

A few points worthy of note: – Chia is a seed, and seeds naturally contain amylose which is not allowed while healing from Mold Illness – especially in the early stages. If you are avoiding all amylose during the rest of your meals- the small amount in this one recipe is unlikely to cause significant disruption. Ask your specialized Mold Illness healthcare expert if this amount of amylose will be acceptable at this stage in your healing.

According to Dr Shoemaker, the low amylose diet is a priority. Taking additional action like removing common inflammatory foods is entirely your decision to make. Some recipes may have ingredients that you don’t like or your body reacts to in some way. We recommend you avoid any food you negatively react to and substitute a different no-amylose food that does not create discomfort. Some common triggers to keep in mind are: nuts & seeds, dairy, and nightshades. Occasional consumption of some potentially inflammatory whole foods like healthy nuts & seeds, small amounts of egg, fresh vegetables & fruits that are considered nightshades might be tolerated by some people. Use caution and observe reactions to these foods carefully when challenging them after your elimination diet.

Always use fresh ingredients while healing from CIRS. NO dried, cured, canned, jarred, or pre packaged foods are recommended because of the potential for mycotoxins and unaccepted additives.

CIRS approved, moldfreemenu recipes will be low or free of amylose, and slant to AIP (Autoimmune Protocol Diet), Dairy Free/Gluten Free/Whole30/Low-carb, Paleo. The recipes will also not contain fungus, mold, or sugar. If any ingredient is unfavorable for you, omit it and potentially substitute something from the Mold Free Menu list of CIRS approved foods that is similar.

*NOTE: eggs are often not tolerated to some degree; causing an inflammatory response. Pay very close attention when reintroducing eggs on your elimination diet; most will need to eliminate eggs for the early stages of healing.
